Turkey Egg, Spinach, & Feta Omelets (yes, I meant eggs from a turkey)
This past weekend Lewis and I finally explored the local farmer's market downtown. I LOVE farmers markets, I feel like a kid in a candy store walking through endless rows of colorful fruits and vegetables, local golden honeys and farm fresh eggs. We stopped to talk to this one fellow who seemed to have many different sizes and colors of eggs, one of which was turkey eggs. I had never heard of such a thing, when we inquired about them he mentioned that the taste was similar to chicken eggs and they make a mean omelet or fried egg sandwich - needless to say we were sold.
So what do they taste like? I actually preferred the flavor over chicken eggs, it has a more rich taste. The main difference was in the shell, which is thicker than what you're used to cracking, they definitely take some time and effort to break and whip. As for the filling I chose, it might seem simple but I have found feta to be my absolute favorite cheese for omelets. The slightly salty flavor and mild melting point mixed with the spinach is the perfect combo for a balanced omelet.
Step 1: Coat your pan with either butter, nonstick spray, oil, or whatever you prefer, make sure you actually pick up the pan and swirl it around so you cover all the surfaces. Put on medium heat and let the pan become hot before adding the egg.
Step 2: Poor the beaten eggs in and add salt and pepper (or other seasonings) if not already added.
Step 3: Swirl the egg around, using a quick back and forth motion, make sure that the egg is consistently cooking. You may find it easier to use a small spatula to gently lift up the layers of egg to allow raw egg to cook. Once egg is almost done, add filling to one side of the circle, in this case I added spinach and feta cheese.
Step 4: Gently fold the omelet in half covering the filling and press down using a spatula. Transfer to plate and serve.

-Broccoli + Brie/Cheddar
-Spinach + Tomato + Feta
-Onions + Peppers + Tomato
