Feta, basil, and tomato appetizer paired with a creamy balsamic vinaigrette


The other night we had dinner at one of my all time favorite seafood places, Bonefish Grille. There, I had this amazzinngg tomato appetizer which was really surprising considering I am not that big of a tomato fan but for some reason this combination of fresh basil, crumbled feta cheese, and creamy yet zesty vinaigrette delighted my pallet. I thought it was also a refreshing change from the typical caprese salad (tomato, basil, mozzarella, and straight up balsamic). It was so good I was craving it the next day so I simple HAD to recreate it.


Easy Tomato Appetizers

serves 6

2-3 fresh roma tomatoes, sliced
5-6 fresh basil leaves, sliced thin (chiffanad)
1/4 cup of feta cheese crumbles (or more)

Creamy Vinaigrette Dressing

1/4 cup balsamic vinegar
1 tsp sugar
1 TBS olive oil
2 tsp mayonnaise
salt and pepper to taste

Method:
Mix until incorporated, I used an immersion blender.

This dressing would also be super tasty in a tossed salad!
