Don't you hate it when you cut into a nice watermelon just to find out that it's overripe (or under ripe)?! Total bummer. Now what do I do with it? Well, when life hands you a bum watermelon you make delicious sorbets!!
This is suuupperrr easy to make and you don't need a fancy-pants ice cream maker to do it! This sorbet is cool and refreshing with the texture of a finely ground snow cone, the lime adds a little kick! You could also add lemon or mint leaves if you wanna mix it up.
3/4 cup sugar
1/2 cup water
3 TBS lime juice
5 cups watermelon, pureed
1.Cook the sugar, water and lime juice over medium heat, stirring occasionally until the sugar is dissolved.
2.Remove from heat and chill.
3.Cut up the watermelon and remove all seeds, puree in a blender or food processor.
4.Stir into chilled syrup.
5.Pour into a 13 x 9 inch pan and place in the freezer for at least 4 hours or overnight.
6.Take out the pan and, using a knife, cut the watermelon mix into chunks (It should be relatively easy to break apart) and place in a blender or food processor. Blend until smooth, then transfer into a pan (I used a loaf pan) place back into freezer for about and hour. Serve and enjoy!
