Mediterranean Chickpea Salad



When you're in the mood for a quick n' tasty salad, this one definitely does the trick! With the fresh flavors of lemon a basil complemented with the sweetness of the peppers and saltiness of the cheese, this dish reflects the feeling of summer (not to mention how colorful and happy it looks). Feel free to add your own ingredients such as diced cucumber, black olives, or some chopped pine nuts!

Mediterranean Chickpea Salad

1 can chickpeas (drained and rinsed)
1/2 red onion minced
4 or 5 fresh basil leaves, chopped
1 or 2 roasted red peppers
1 cup crumbled feta cheese
1 garlic cloves, minced
2 tsp lemon oil
2 tsp olive oil
1 tsp lemon juice
salt and pepper to taste

Method

1. Simply mix everything together and enjoy!
