Blueberry Sausage Waffles
The other day while I was causally meandering through the frozen section I had the most insane childhood flashback ever!Whenever my family and I were on vacation, every morning for breakfast I would eat a HUGE stack of homemade pancakes with my dad (this is when I lived my life in blissful caloric ignorance...I kinda miss those days). I also remember my mind being blown when I suddenly had the idea of wrapping my pancake around the sausage to equal one savory sweet syrupy bite of heaven. Mind you, these were the good old days when you couldn't just buy the pre-made frozen pancake sausage "corn-dogs." I was convinced I had made up this ingenious way of eating and I, to this day, am convinced that nothing has gone so well together as that beloved pancake and sausage.
Fast forward about 10+ years and you have me: a hungry girl who wants to stick to her vegetarian lifestyle and..for lack of a better phrase "womanly figure" but craves those rich breakfast foods, thus the blueberry sausage waffle was born!
I have tried my fair share of whole grain "healthy" pancake/waffle mixes. Everything from Bob's Redmill to Fiber One, even a couple of homemade attempts but none of them have sufficed. They always tasted healthy, ya know what I mean? They have that air about them where they're either too dense from the grains or too dry from all the fiber. Nothing seemed to satisfy me until one day when I stumbled upon this weird looking box in Target -
Ladies and gents, I present to you THE BEST healthy mix out there, Kodiak Cakes! They say buttermilk and honey on the front but if you check the ingredients it's nothing but whole grain flour goodness! I don't know how they do it, but Kodiac cakes are light and fluffy in texture, believe me, you won't be disappointed!
Just give me the recipe already!
(To make 4 smaller sized waffles)
1 cup Kodiak mix
1 cup COLD water
medium sized handful of fresh blueberries
about 1/2 cup (or more to your liking) crumbled and cooked sausage of your choice (I used Lightlife Gimme Lean vegetarian sausage, you can pick it up at Publix, it looks like this:
add syrup, butter or anything else!
I have also made the following flavors with this mix:
-Banana chocolate chip (just mash one banana and add to mix)
-Pumpkin add puree pumpkin, pumpkin pie spice and a pinch of brown sugar
These waffles gave me that sweet and savory flavor I was craving without any guilt! Kodiak cakes have 4 grams of fiber and 6 grams of protein per serving, not to mention they do not contain any preservatives! What do you have to loose?
